Doesn’t summer remind you of good old fashioned Lemonade!!! Here is a great recipe courtesy of Cooks Country 🙂 They found a way of maximizing the bright flavor of the fresh lemon with just the right amount of sweetness. Fresh squeezed lemons make a huge difference, but the addition of lemon zest elevates the flavor to another level…. the key is making a muddle!! Here’s what you do…. look for large slightly soft lemons you’ll need about 14 total for 6-8 servings…. (Includes garnish)
Recipe:
1 1/2 c. sugar
7 c. cold water
2 c. fresh lemon juice from about 12 lemons
1 whole lemon sliced thin (ends discarded)
1 lemon sliced for garnish
Ice
Put your lemon slices and sugar in a bowl and mash them with a potato masher or some sort of object until the sugar begins to dissolve. This process releases the flavor of the oils in the lemon and gives the lemonade that deeper fresher flavor. Add your water and juice and stir until the suger is completely dissolved (can use superfine sugar it dissolves faster or a substitute of your choice) strain out the lemon bits and serve with plenty of ice 🙂 To add color save a few slices to put into your glasses and container…it makes it pretty)
