I decided to share a bit of the salad lovin section of Jamie’s book.
In the salad chapter he helps you understand and master the key “salad skills.”
He shows you how a salad can evolve very easily from
2 ingredients to twenty and teaches the art of DIY dressings.
I decided to give a go at his everyday green chopped salad recipe.
The mixture includes scallions, cucumber, basil leaves,
avocado, butter-head lettuce, alfalfa and (optional) cheddar cheese.
Chop everything up really small and then tackle the dressing.
Jamie makes a well in his salad and mixes the dressing right in
the middle of it…
I wasn’t about to do that on my first try….
I was concerned there would be to much dressing.
I opted for the safer route and mixed it in a jar )
To be honest, I’m not use to simple homemade dressings.
I need to learn to enjoy
this style, because I know it’s a lot healthier.
Dressing Info:
6 T evoo, 2 T red wine vinegar, 1 t. English mustard
a pinch of salt and pepper.
Next time I’m going to sub sherry vinegar and
add a small clove of chopped garlic.
I think I might like it a bit more.
Give it a good shake or stir and pour over your fresh greens!! Yum!!
